Delicate Chocolate Cake

Ok. My kids were quite miffed that I had not baked a “real” chocolate cake in a while, without any corruptions to it like nuts, oatmeal, fruits, etc 🙂 So here goes!

This is a super easy and super fast to make cake. Recipe from the book Fall Baking Cookbook by Taste of Home (2009). Great buy!

1/4 cup – cocoa powder

1 cup – water

1 cup – canola oil

1/2 cup – butter, cubed

Place all this in a saucepan and place over medium heat, till it comes to a boil. Remove from heat.

2 cups – flour

2 tsp – baking powder

1/2 tsp – salt

Sift together and pour into your mixing bowl. Add the cocoa mix and

2 cups – castor sugar

2 – eggs

1/2 cup – buttermilk

Fold in and mix well. pour into your greased pan and bake at 350 F (180 C) for 30 minutes.

Can add a frosting to this. If adding, then make the cake in two pans so that it is easier to frost as the texture is very delicate. Really!

1/2 cup – butter, cubed

1/4 cup – cocoa powder

1/4 cup – milk

4-4 1/2 cups – icing sugar

1 tsp – vanilla

In a saucepan, on medium heat, place the butter, milk and cocoa powder. Bring to a boil. It will appear curdled. Slowly add sugar and vanilla till you reach spreading consistency. Frost between two layers (if using two cakes) and the top. Can also cut the one cake you are making into rectangles.
