Yes! Savoury muffins! First time for me and I must admit, it takes a while to get used to muffins not being sweet! 🙂 These came out rather well and are super quick to make once you have the ingredients together. Can make a nice starter for a dinner or some finger food/snack. No beating or whisking and all done very fast!
1 cup – cottage cheese, crumbled
1 cup – almonds, ground fine
1/4 cup – flour
1 tsp – baking powder
1/2 tsp – salt
1/4 cup – sun-dried tomatoes (in oil), chopped
1/4 cup – basil, chopped (I used the dry chopped leaves that comes in a bottle)
1/4 cup – water
4 – eggs, slightly beaten
3/4 cup – parmesan cheese
Place everything in a bowl except the cheese. Do not beat too much and prepare the muffin cups. Spoon the batter into the muffin cups and sprinkle the cheese over.
Bake at 400 F (204 C) for 30-35 minutes.
