This surprise cake was really a surprise!! 🙂 Recipe from the trusted Reader’s Digest 1001 recipes from the world. Am thinking this is one of the best buys!! 🙂 This seemingly easy cake is packed with flavours so give it a shot!
1/3 cup – brown sugar
2 tsp – cinnamon powder
Mix the two in a bowl and keep aside
2 cups – flour
2 tsp – baking powder
1/4 tsp – salt
Sift the dry ingredients and keep aside
1/2 cup – soft unsalted butter
1 cup – sugar (I think this can be halved. I did as we do not like very sweet cakes. You can maintain the measurements but!)
1 tsp – vanilla essence
2 – eggs
1 cup – sour cream or yoghurt
1 cup – crushed toffee (I used Lacto King toffees)
1/4 cup – walnuts (optional)
1/4 cup – melted butter
Cream the butter, sugar, eggs and vanilla together till light and fluffy. (The thumbrule is first the butter, then add sugar, then add eggs one at a time and then vanilla!)
Add the flour mix and fold in with sour cream or yoghurt.
Pour half the batter into your greased pan and then sprinkle the brown sugar and cinnamon mix evenly. Pour the remaining batter and then sprinkle the toffee over it. Drizzle with the melted butter.
Bake at 162 C (exact!) or 325 F for 50-60 minutes. Or check if baked and completely caramalized before taking out.
For the first time came out superb! Am thinking will be great with ice cream or custard!
